The specification sheet for each product will identify how that product is “handed”, meaning if you are standing facing the shower, the “left-hand” refers to either the seat or the valve depending on the product.
The return receiver flange allows for the drywall to be terminated perpendicular to the entry of the shower instead of parallel. This allows for clear floor space beyond the shower entrance per ADA, FHA, and ANSI codes.
Yes, cardboard feet on the bottom of a shower are there to lift a barrier free threshold off the ground. You must remove the cardboard feet before installing.
